Pizza Logs are crispy, crunchy egg rolls filled with gooey, melted mozzarella cheese and garlicky pepperoni. Whether you whip these up in your air fryer, oven, or in a frying pan, you’ll want these not just for game day, but all the time!
While chicken wings understandably get the lion’s share of Buffalo food glory, if you go to any sports event or other large public event in Buffalo, New York you are going to find Pizza Logs at the snack bar or concession stand. That is because -quite simply put- they are irresistible.
From Bills and Sabres games to local high school football games, you’ll find the people of Buffalo wandering around with little paper bowls filled with piping hot pizza logs in their hands and a smile on their faces. And super helpfully, they’re significantly less messy to eat than Buffalo’s ubiquitous wings.
(Don’t worry, chicken wings. I still love ya, but today is for the pizza logs. Let’s go Buffalo!)
Everyone loves hand-held food, but pizza logs elevate the hand held snack food category to a whole new level of convenience and deliciousness. What is more fun (or more tasty) than a crunchy egg roll filled with gooey, molten cheese and spicy pepperoni dunked into whatever pizza sauce dings your chimes?
Pizza Egg Rolls
Best of all, pizza logs or pizza egg rolls are ridiculously easy to make. All you need to do is grab five simple ingredients:
- Egg Roll Wrappers
- Part Skim or Whole Milk Mozzarella Sticks
- Sliced Pepperoni
- Butter or oil
- Pizza Sauce or Jarred Spaghetti Sauce
While I suppose you could use wonton wrappers for mini-pizza logs, real deal pizza logs are made with full sized egg roll wrappers. Egg roll wrappers are about 8-inches square while wonton wrappers are about 3-inches square.
Whether you use part skim or whole milk mozzarella sticks is up to you entirely. Both are delicious with slightly different results.
Whole milk mozzarella sticks will be much creamier and stretchier when melted. Part-skim mozzarella is not going to be an advantage unless you prefer lower calories and fat.
You can choose whichever thinly sliced pepperoni you like best. I do not advise using thick sliced pepperoni because it won’t roll up as nicely in the egg roll wrappers.
And folks. Once you’ve rolled these bad boys up, do not skip the fat on the outside.
Let me explain why; egg roll wrappers are dusted with cornstarch to help keep them from sticking together in the package. If you do not brush the outside of the pizza log with butter or oil, you’ll get a little bit of the dusty cornstarch in every bite.
In addition to helping tame the cornstarch, brushing the outside of the pizza egg roll with butter or oil helps crisp it up if you’re air-frying or baking it. If you’re frying it in a pan, you can either brush the rolls before pan frying, or add a small amount of oil directly to the pan.

Pizza Logs
When I say these are easy to make, I mean it. The only way for these to be easier is to purchase them already rolled up.
But mercy, when you look at bang for your buck, you’ll get so many more delicious pizza rolls for your money making your own. And folks? You’re going to want more.
Here’s the whole process. Start by gathering your ingredients.
Open your egg roll wrapper package and lay the stack of wrappers on a large cutting board or clean counter. Cover them with a clean towel.
Fill a ramekin or small bowl with water and set that near your egg roll wrappers. Take one egg roll wrapper out from under the towel and lay it out on the cutting board in a diamond shape.
One point should be aiming toward your stomach. In the center of the egg roll wrapper, arrange four slices of pepperoni in an overlapping line and top with an unwrapped cheese stick.
Dip your finger into the water and use it to moisten the top two edges of the egg roll wrapper. Fold the bottom corner up and over the pepperoni and cheese and use the wrapper to gently snug the contents together.
Fold the corners in from either side and tuck them around the filling, then roll away from you toward the moistened edges. Press to seal.
If the corner has trouble sticking, you can re-moisten it and press again. If your egg roll wrappers continue to have trouble sticking, you can beat an egg and brush that on to seal them.
Set the wrapped pizza log on a plate or half sheet pan. Continue with the remaining egg roll wrappers, pepperoni slices, and mozzarella sticks, leaving a little space between the rolls so they will not stick together.
Air Fryer Pizza Logs
To prepare the pizza logs in the air fryer, preheat your air fryer for 5 minutes. While it heats, brush the pizza egg rolls generously with melted butter or olive oil.
When the air fryer is fully heated, arrange the pizza logs in the air fryer basket. Set the air fryer temperature at 380ºF.
Air fry the pizza logs for 10 to 15 minutes, or until browned to your liking, shaking or using tongs to turn about halfway through the cooking time.
Let the pizza egg rolls rest for 3 minutes before transferring to a plate and serving with pizza sauce for dipping.

Oven Baked Pizza Logs
Preheat your oven to 425ºF.
Arrange the rolled pizza logs on a rimmed half sheet pan and brush generously with melted butter or olive oil, making sure there is room for air to circulate around them. Bake for 12 to 14 minutes, turning over halfway through the cooking time, or until golden brown.
Let the pizza egg rolls rest for 3 minutes before transferring to a plate and serving with pizza sauce for dipping.
Fried Pizza Logs
Add 1/2-inch of oil to a frying pan with deep sides over medium high heat. Heat until the oil is shimmering or until the bubbles form and float up instantly around the handle of a wooden spoon inserted in the oil.
Gently lower the pizza logs, one at a time, into the hot oil, taking care not to crowd the pan. It may take a couple of batches depending on the size of your pan.
Fry for 1 to 2 minutes, or until deep golden brown underneath, use tongs to flip carefully, and fry another 1 to 2 minutes, just until golden brown. Transfer the fried pizza logs to a paper towel lined plate and let them rest for at least 3 minutes before serving with pizza sauce for dipping.

Hi Ruth- You could probably make something tasty with pizza dough or flattened out canned biscuits, but the texture of pizza logs as they’re made relies on eggroll wrappers. 🙂 That said, I’d play around with the pizza dough or biscuits and see what kind of tasty treat you could create!

I make snack for a children’s ministry. It gets transported 30 minutes and served randomly over the period of an hour and a half to different groups. Would these be good, kept warm in a crock pot? Could they be “re-crisped” in the oven if they get limp?

Hi Marie- I think they’d probably get soggy in the crock pot, honestly. But yes, they could be re-crisped in the oven or in a frying pan with a little smidgen of oil.

Hi Rie! I’d say you could make them and freeze them, then transfer to a freezer bag and store for at least 3 months in advance. You’d just increase your cook time by about 1 to 4 minutes, depending on whether you make them in the air fryer, oven, or pan!
