The truth is, once you’ve made this appetizer, you might forget other appetizers exist. It might just become your signature party dish!
Baked Brie Puff Pastry
What is Brie en croûte? It’s baked brie in puff pastry and it is divine. In its simplest form, it is a wheel of brie wrapped in puff pastry and baked until the cheese is gooey and the pastry is golden brown and crisp on the outside.
Our brie en croute recipe is next level party fare, because we start with impossibly adorable baby brie bites. You can find these buttery little rounds of heaven at well-stocked grocery stores, wholesale food clubs, and cheese shops.
As for puff pastry, you can either purchase some from your grocery store’s freezer section or make your own using croissant dough. Either way, you’re going to hit the appetizer ball out of the park with this brie en croute!
How to Bake Brie
If you’ve ever wondered how to bake brie, don’t blink or you’ll miss the explanation entirely.
You start by enclosing the brie in a puff-pastry package. Most store-bought puff pastry comes in the form of dough that is folded into thirds like a letter and frozen.
Because of this, the process starts with thawing it according to the manufacturer’s instructions. A half an hour or so -unwrapped- at room temperature, covered with a clean towel usually does the trick, but be sure to check your box for details.
For our baked brie bites, we cut circles that are slightly larger than the baby brie rounds from the thawed puff pastry. We need 2 circles to sandwich each round of brie, then a quick egg wash, and trip through a hot oven complete the recipe.

Baked Brie with Jam
Baked brie is often served with jam because the acidity of the fruit helps balance the rich, buttery cheese. I like to serve my brie en croute with Sweet and Spicy Cranberry Sauce, Blueberry Jam, or -when time is tight- canned whole berry cranberry sauce mixed with a minced jalapeño pepper.
You can use any jam or jelly or preserve you love to accompany your baked brie recipe. The sky’s the limit!
Brie en Croûte Recipe
What do you need to make this recipe? All you truly need is a half sheet pan and a round cookie or biscuit cutter, but you could arguably get away with just using a sheet pan and a knife to cut the puff pastry.
Brie en Croûte
Preheat the oven to 400ºF. Line a half sheet pan with parchment paper and set it aside.
Carefully unfold the puff pastry on a lightly floured counter and roll over it gently with a rolling pin just to even out the seams.
Use a 3-inch round biscuit cutter to cut 20 puff pastry circles. Place half of them on the prepared pan.
Brush the pastry circles that are on the pan very lightly with the beaten egg. Position one brie round in the center of each of the circles.
Roll the remaining pastry circles gently until they are about half an inch wider in diameter than they were when you cut them. Drape one circle over each round of brie.
Use your fingers to smooth the pastry over and down each brie round. Use a fork to crimp the top pastry round into the bottom one, sealing them together.
Lightly brush the pastry packages with the beaten egg and bake for 15 minutes, or until the puff pastry is lofty, golden-brown, and flaky.
Remove the pan from the oven and let it rest for 3 minutes before transferring the brie en croute to a serving plate with one or more varieties of jam. Garnish with rosemary, thyme, or parsley, and pomegranate pips, if desired.
