What is it about February? It is the shortest month of the year, yet somehow it contrives to feel like the longest. My theory is that it is all about the weather. Around us, at least, it is still snow and ice and blowing winds interspersed with thaws and warm sun and longer days. It’s hard to catch your balance and know what the next day’s weather will hold for you. Amongst all of this off-kilter-ness, it is nice to have a constant in place and that’s where our Easy Meal Plan February 29- March 6 comes into play. Welcome to our Leap Meal Plan! One extra day in this funky little month that feels like two months. By Tuesday we will be in the month where spring officially starts and somehow that feels green and fresh and warm even if the weather doesn’t cooperate.
