I love all things pineapple. It’s a flavour that screams summer to me. There’s something slightly exotic about pineapple that really perks up every food and drink it graces. It’s that perfect balance of sweetness and acidity that knocks my socks off every time. It’s a natural when it comes to mixology, of course, making adding a little complexity to your beverage as effortless as popping open a can of juice. If you’re looking for the most refreshing refreshment to refresh yourself, look no further than the Pineapple Mule Cocktail and Mocktail. Moscow Mules, those perennial favourites of the cocktail world, traditionally contain ginger beer, lime juice, mint, vodka, and ice. In a twist on the classic, the Pineapple Mule Cocktail is an icy cold beverage keeps everything but the lime juice and is bursting with fresh pineapple flavour courtesy of DOLE® 100% Pineapple Juice. And because not every adult wants an adult beverage (or sometimes you want to include the kids on the chichi fancy fun), the Pineapple Mule Mocktail delivers the same level of delicious refreshment minus the alcohol.
With a Pineapple Mule Cocktail or Mocktail in hand, the only thing left to do is prop your feet up on the porch rail and chill.
Cook’s Notes
- This Pineapple Mule Cocktail and Mocktail are about as easy as it gets. All the same, I advise a couple of things to make the most of your beverage. First, don’t skimp on the ice. I fill my glass to within 1/2 an inch of the top.
- Speaking of glasses, you have a couple of choices. I am a proud owner of two copper cups, which are the traditional vessel for Moscow Mules. That is, not coincidentally, the number of adults in my home. When I’m making both cocktails and mocktails, I differentiate them visually by putting the high octane version in the copper cups and the mocktails in glasses. This way there’s no chance that someone who shouldn’t be sipping the ones with alcohol will get them accidentally. No copper cups to be had? No problem. Simply use a nice cocktail glass.
- In the recipe, I specify that you should smack the mint leaves between your hands like you’re clapping. This is not a silly, frivolous instruction. Doing this helps bruise the mint leaves which releases the oils and aromas of the mint leaf. The faint scent of mint is part of the experience of the Pineapple Mule Cocktail and Mocktail. Don’t skip it.
- In the mocktail recipe, I specify that you can use either Ginger Switchel Drink or unsweetened apple juice. I think it’s probably obvious that I greatly prefer the Ginger Switchel Drink in this application. It delivers a little flavour punch that apple juice just can’t. However, if you aren’t a fan of switchel, or don’t have the time or means to make it, unsweetened apple juice will stand in nicely.
- One 6 ounce can of DOLE® 100% Pineapple Juice works perfectly to make two Pineapple Mule Cocktails or Mocktails. Even the grocery store in our little town carries the 6 packs of the juice at $3.79/6 pack, so if we can get it, I’m sure you can, too. It’s great to have on hand to add to marinades and smoothies, too.

For the cocktail:
- 2 fresh mint leaves divided
- 1 1/2 ounces vodka
- 3 ounces DOLE® 100% Pineapple Juice
- 6 ounces chilled ginger beer
For the mocktail:
- 2 fresh mint leaves divided
- 1 1/2 ounces Ginger Switchel Drink or unsweetened apple juice
- 3 ounces DOLE® 100% Pineapple Juice
- 6 ounces chilled ginger beer
Instructions
For the Cocktail:
- Fill a copper mug or cocktail glass with ice. Smack a mint leaf between your hands to release the aroma. Lay it on the ice. Pour the vodka over the mint leaf, followed by the DOLE® 100% Pineapple Juice and ginger beer. Stir briefly with a cocktail stirrer, chopstick, or spoon. Smack the remaining mint leaf, rub gently over the rim of the glass, then use to garnish. Serve immediately.
For the Mocktail:
- Fill a copper mug or cocktail glass with ice. Smack a mint leaf between your hands to release the aroma. Lay it on the ice. Pour the Ginger Switchel Drink or unsweetened apple juice over the mint leaf, followed by the DOLE® 100% Pineapple Juice and ginger beer. Stir briefly with a cocktail stirrer, chopstick, or spoon. This drink was awesome! I am usually not a fan of Ginger Beer, but the quantity in this drink was just perfect!

I made this recipe including the copper mugs, clapping the mint, ice up 1/2 inch to the top. It was actually disappointing. The pineapple doesn’t taste good with the ginger beer. I salvaged it with a little lime juice, but it just needed to not have the pineapple juice in it. I’d suggest a moscow mule or dark and stormy separately from pineapple. For a drink that includes pineapple, try one part pineapple juice with one part bourbon and juice from 1/2 lemon shaken over ice with a little thyme on top. Otherwise I’ve also had success with 1 cup pineapple juice in the food processor with a de-seeded jalapeño, strain out the jalapeño and mix with 1 cup tequila. Shake over ice, and this will make 2 delicious pineapple jalapeño margaritas. Don’t forget fresh ice and salt or sugar on the rim.
