I have a love/hate thing with S’mores. I love, love, LOVE the toasted marshmallow flavour, but I hate the sticky mess s’mores create. As someone who has had long hair for much of her life, I can promise you toasted marshmallow in your hair while camping in a tent in humid summer weather is no fun. This is truth. I thought to myself, “I wish I could just DRINK these flavours…” and the proverbial lightbulb went off. Liquid s’mores, friends. That’s where it’s at. S’mores Milkshake with Toasted Marshmallow and Chocolate is how THIS girl does s’mores. Bring on the campfire and tent. I’m all good now.
I think I’m the only kid who ever passed on s’mores because of the sticky factor. I got one smeared into my long hair one time and that stuck with me -literally at first, then figuratively- to the point where it just didn’t seem pleasurable enough to offset the goo, but OH! how I loved that toasted marshmallow smell and taste. The little lingering bitterness of burnt sugar paired with the sweetness was pretty tempting.
That’s why the idea of drinking the works was so appealing. It was everything I loved about a s’more and nothing oogey. I use words like this because I am a grown woman.
The first step in a legitimate s’mores anything is the toasted marshmallows, right? I think we can all agree it can’t ACTUALLY be a s’more without the toasted marshmallows. I wasn’t about to build a campfire just to toast some marshmallows, and my eldest boys (the championship fire starters) were away at a missions work camp, and I didn’t especially feel like stuffing a box of matches into the hands of the 8- and 10-year-olds, so I used our torch. No. It’s not some fancy-pants culinary torch. It’s a hard-core, wood-stove startin’, flame-on torch.
Our torch works hard for its keep and it shows… but honest-to-Pete, I have enough stuff rattling around in my kitchen drawers and shelves that I don’t feel compelled to own a show torch. Flame is flame, no? And holding the skewer of marshmallows (because this milkshake contains not one, not two -no, no, no- but FIVE whole flame toasted marshmallows) in one hand and the torch in the other allowed me to get the perfect amount of char (read: A LOT) on the pouffy white clouds of spun sugar.
Cook’s Notes
- There’s not a hard-and-fast amount of milk specified in the recipe, because it’s all about how thick YOU like your milkshake. I prefer a splash; just enough to get things moving in the blender to make a smooth, thick, almost paste-like milkshake. My hubby likes a thinner milkshake, so for him, I’d add as much as a half of a cup of milk.
- Don’t skimp on the charring of the marshmallows. Remember it’s going to go INTO a milkshake and be blended. The more toasted your marshmallows are, the more pronounced the flavour will be in the final product.
- I love Perry’s Dark Chocolate All-Natural Ice Cream for this milkshake, but any good chocolate milkshake will do if you can’t find it. If you can only find regular chocolate ice cream, please add a tablespoon of dutch process dark cocoa powder to the mix!
- It may sound like S’mores Sacrilege, but the graham crackers are my least favourite part of the works… Teddy Grahams add the perfect amount of graham presence, a little whimsy (I mean, honestly… Teddy bear graham crackers drowing/swimming in toasted marshmallow fluff? Who could resist that?)
- And marshmallow fluff. Can we chat for a moment? The homemade stuff is VASTLY superior, but the purchased stuff will do in a pinch.
- You are VERY welcome to plop it on top of the cup if you wish, but I prefer to cram it in a pastry bag and pipe it on with a wide tip. It’s prettier. I like pretty things.
- Speaking of cups, please use one that is capable of handling extreme heat and cold without, oh ya know, bursting. Best vessel for the job is DEFINITELY a canning jar. Those things can take it all!
- Serve with a spoon on the side! You’ll want to scoop up that lovely toasted marshmallow. ~OR~ make like my kids and serve with a bowl of extra Teddy Grahams for dipping and dunking. We’ve already covered why I don’t choose to do that. EGADS, the stickiness!
S’Mores Milkshake {Toasted Marshmallow & Chocolate Milkshake}

Per Milkshake:
- 5 full-sized marshmallows
- 5 large scoops dark chocolate ice cream or 5 large scoops regular chocolate ice cream plus 1 tablespoon Dutch process cocoa powder
- a splash to 1/2 cup of milk
- 1/3-1/2 cup homemade or purchased marshmallow fluff or creme
- milk or dark chocolate squares
- Teddy Graham chocolate chip or chocolate cookies
Instructions
- Thread the marshmallows onto a skewer and hold them over an open flame or use a torch to darken and toast until some areas are well charred. Lay on a heat proof surface to cool to room temperature.
- Slide the toasted marshmallows into a blender along with the ice cream (and cocoa powder if using) and the milk. Blend until smooth. Pour into a heat/cold proof jar or glass. Pipe or scoop the marshmallow fluff/creme on top and use the torch to char/brown the surface. Garnish with pieces of dark or milk chocolate and Teddy Grahams.
